Lomo Saltado

Beef Sautee
½
lb beef skirt
2 tsp olive oil
1t chopped garlic
1 red onion sliced
1 tomato quartered
1 jalapeño sliced
1 can red enchilada sauce
24 oz frozen French fries
oil for deep frying
fresh cilantro for garnish
Marinade:
1 t soy sauce
1 t pisco or cooking wine
1 tsp cornstarch
1 tsp sugar
1 tsp chopped fresh cilantro
½ tsp oregano
½ tsp cumin
¼ tsp salt
¼ tsp pepper
Thinly
slice beef against grain, marinade with listed ingredients for 15 - 20
minutes
Heat oil to deep fry potatoes. Fry until golden crisp. Arrange in platter.
Heat 2 tsp oil in frying pan and fry garlic and onion, add beef, stir
fry.
Add tomatoes, jalapeño and red enchilada sauce. Sautee for a few
minutes. Pour over french fries, garnish with cilantro and serve with
rice.
