Cau Cau
2 lbs
beef book tripe
1 onion, chopped
6 cloves garlic, minced
1 tsp turmeric
1 chili pepper
2 potatoes, cubed small
1 tbsp parsley
4 tbsp oil
salt, pepper to taste
In a medium
pot, place book tripe and enough water to cover. Cook for 30 minutes.
Drain and reserve 2 cups of tripe broth. Cut the tripe into small cubes.
Sauté onion and garlic in oil. Add the cooked tripe, turmeric,
chili pepper, potatoes, parsley and the reserved broth, season with salt
and pepper, stew for 15 more minutes and serve.
